HIGH FIBER CARROT MUFFINS

DESS_54_tin_webTo all Carrot Cake lovers, I’ve came up with a super easy, healthy and very delicious recipe for you – LOW Calorie and LOW in Carbs!

As I always try to keep the Fiber content high enough to reduce the total amount of digestible carbohydrates, I used my favorite Coconut Flour and Wheat Bran for these mouth-watering muffins and a bit of Sweet potatoes. So here what you need for these yumminess.

Instructions
  1. Whisk 2 Eggs with Almond Milk, Stevia together.
  2. Blend in Coconut Flour, Wheat Bran and Coconut Oil.
  3. Add shredded Carrots and Sweet Potato puree, mix well.
  4. Add 1 tea spoon of Baking Powder dissolved in lemon Juice, mix.
  5. Bake in preheated oven till 220C for 20 – 25 minutes or till ready.

Fats 6.5, Carbs 8.1, Proteins 3.6, Fibers 3.5, *Kcal 97.2

*Total Calorie number takes into a count the energy value of Fibers, if you exclude 3.5 of Fibers, it comes up to 83.2 Calories per 1 Muffin.
