HEALTHY GUILT-FREE PUMPKIN PIE – a perfect autumn dessert and a must have for every Thanksgiving festive menu.

Instructions
CRUST
  1. First grind Cauliflower in blender to fine consistency; add all other ingredients and blend until smooth or until you can form the dough with your fingers. Oil a round glass tray with coconut oil and spread the crust all over it, use fork to make some holes in it, so the crust will not bubble while backing. Cook in preheated oven to 250 C for 15 min.
PUMPKIN FILLING
  1. Preheat oven to 250 C, whisk all ingredients in medium bowl until smooth. Pour into crust. Bake 15 min. Reduce temperature to 175 C and continue backing for 35 - 45 min or until knife inserted 2 cm from crust comes out clean. Cool. Garnish as desired.
